to me, Sonic the Hedgehog. Chrono Trigger and Chrono Cross as well. But that's just to me. Although im sure Sonic has had impact on many other people out there.
Commander Keen, Hocus Pocus, Jazz Jackrabbit, Boppin, Heartlight, Xargon, Gate World, Rise of the Triad, Raptor call of the shadows, and of course Wolfenstien 3d (Blake Stone was "ok").
There are so many it's hard to choose without just listing a load of games.
In terms of impact, Probably Every new Dizzy games we bought on our trusty Amstrad cpc, The first time i played Sonic the hedgehog or First seeing Final fantasy 7.
They're usually a defining moment from one generation to the next.

I'm becoming all nostalgic just looking at Vortex's list. (I never got anywhere in Gateworld, though.)
As for game soundtracks, I always liked the classic Sonic themes as well as some of the more modern power-metally soundtracks from the Dreamcast era. Zero Wing had a great soundtrack, which is often overlooked (along with the entire game save the intro), and the MIDI-jazz of Transport Tycoon was very catchy indeed.
